Variability of quality characteristics of carrots commercialized in five points of Ciudad Obregon, Sonora, Mexico
Main Article Content
Abstract
Carrot (Daucus carota) is a crop of great agronomic and nutraceutical interest. The largest volume of carrots produced is freshly marketed, however, the standards for its conservation are not always met, nor do they have the characteristics suggested by the Official Mexican Standard. The objective of this work was to evaluate the variability of agronomic, physiological, and environmental characteristics during its commercialization in five sales sites of Ciudad Obregon, Sonora, Mexico. At these five sites (S1; S2; S3; S4; S5), fresh minimally processed carrots are authorized to be marketed. The evaluated variables were fruit length and diameter, the number of necrotic and/or mechanically damaged fruits, and the temperature of the shelves. As a result, it was obtained that there was variability in the carrot quality parameters among the sampled sales sites. The diameter of the crowns was the variable with the least variability. Four of the marketing points do not comply with the Official Mexican Standard for the national marketing of carrots. The best quality carrot sales site was 4. The high temperatures significantly increased in the number of carrots with necrosis, decreasing their quality.
